Long Time No Talk & Colorado

Wow! It's been a really long time since I have written anything, but it hasn't been without good reason! As many of you may know, Kris and I moved back home to Colorado from Lincoln, IL in late December. Since we have been back, we haven't been able to find a place of our own. So . . . long story short, we have been living with my in-laws.

It seems that things have been so busy for the both of us. I just graduated from Lincoln Christian University in May with my BA in Youth Ministry. Since January, I have also been interning in the youth department at my home church, LifeBridge. Kris decided to go back to school to train to be an air traffic controller. He has been taking waaaaay more credits than most people could possibly take (25 this semester) so that he can finish in December, which is about the same time that my internship ends here.

All that being said, we have obviously not been able to find the time to cook for ourselves very frequently. Which . . . is a huge bummer. I have so many new recipes and ideas I want to share with you! It's just difficult when we don't have our own kitchen to experiment in!

I wanted to write an update though to inform you all that Kris and I are on the hunt for a place to live. We have been pursuing several properties pretty seriously and are trying to get everything squared away so that we can be in our own place at the beginning of October! :) Once this happens, there will be much more posting of recipes and such so I am excited!

As far as Colorado goes . . . I have to say it is pretty awesome here. In the 4 years I lived in the Midwest, one thing I did learn is that I am not a Midwest person. Colorado is definitely the place for me, and I do have to say, it makes healthy eating that much easier. Colorado, particularly in Boulder County where we live, is a hot bed for healthy living. There are great farmer's markets and Whole Foods Grocery which I LOVE! We have enjoyed a lot more fresh fruits and vegetables (and even fish!) and have also been more active. We have gone hiking, played lots of Ultimate Frisbee and have both bought road bikes and Vibram Five Fingers for running.
